Matt and Jessica are building a custom catamaran galley and testing whether a convection oven mounted permanently inside a cabinet is safe to operate without risk of fire or foam distortion.
The galley layout centers on a Vitrifrigo 5.1-cubic-foot all-fridge unit — the same brand used on their previous boats Elements and Serendipity — chosen over stainless drawer systems that average 150 pounds each.1:25 A separate Vitrifrigo freezer drawer uses a Danfoss BD35 compressor mounted on a slide-out drawer with active fan ventilation ducted through the hull, replicating a setup that reduced compressor run time on Elements.4:27 A dishwasher is also planned.5:42
For the oven cabinet, Jessica designed the shelf height to provide exactly six inches of clearance above the convection oven.7:24 A snap thermostat triggers a 155–175mm fan when the cabinet reaches 100°F, running until it drops to 85–90°F.9:50 The cabinet interior will be lined with reflective foil.14:14 With no fan running and no foil installed, a 30-minute bake at 425°F raised the cabinet ceiling to 129°F — well below the 175–200°F threshold at which the foam core distorts.10:45 A DeWalt fan dropped that temperature 20 degrees in under one minute.16:13 All structural materials — foam, fiberglass, vinyl ester resin — are flame-retardant, eliminating fire risk even if the fan fails.10:30
